Roasted Corn and Black Bean Salsa

Ingredients:

  • 1 15.5 oz. can black beans, drained and rinsed
  • 1 large ear sweet corn, roasted and kernels cut from ear
  • 1 poblano chili, roasted, peeled,seeded and diced 1/4 inch
  • 1/2 cup red Bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup chopped, fresh cilantro
  • 1 Serrano chili, seeded, deveined and minced
  • 1 lime, juiced
  • 1/2 tsp freshly ground cumin seed
  • Kosher salt and black pepper to taste

 

Method:

Mix everything together in a bowl and season to taste. Chill for several hours before serving
